MIRACULIN

Der Inhaltsstoff der die Beere so besonders macht, ist das Glykoprotein Miraculin (abgeleitet vom lateinischen Wort miraculum = das Wunder). Dieser ist dafür verantwortlich das saure Dinge plötzlich süß schmecken. Bei neutralem pH-Wert bindet sich das Miraculin an die Rezeptoren der Geschmacksknospen und besetzt diese. Sinkt der pH-Wert, etwa durch die Aufnahme saurer Nahrungsmittel, verändert das Miraculin seine räumliche Struktur und aktiviert dadurch die Süssrezeptoren – saures wird dann als süss wahrgenommen.

SYNSEPALUM DULCIFICUM

Synsepalum dulcificum is a plant known for its berry that, when eaten, causes sour foods (such as lemons and limes) subsequently consumed to taste sweet. This effect is due to miraculin. Common names for this species and its berry include miracle fruit, miracle berry, miraculous berry, sweet berry and in West Africa, where the species originates, agbayuntaami, asaa, and ledidi. The berry itself contains a glycoprotein molecule, with some trailing carbohydrate chains, called miraculin. When the fleshy part of the fruit is eaten, this molecule binds to the tongue’s taste buds, causing sour foods to taste sweet. Unfortunately fresh fruits are very unstable and have a very short shelf-life.

Is miraculin safe ?

For ages synsepal dulcificum has been used by native inhabitants of Western Africa as a taste enhancer.

Synsepalum dulcificum containing miraculin was consumed for centuries by the indigenous people of West Africa to improve the taste of food consumed. Synsepal for the western world discovered in 1725, the French explorer Reynaud Des Marchais, who drew attention to the customs of the natives.

Over the years, they were carried out extensive research on the understanding of the phenomenon of active molecules contained in the fruit and its suitability for commercial use. The study also focused on the impact of mirakuliny on insulin resistance, or the stimulation of appetite among people in active cycles of chemotherapy.

Researchers have found that in 8 of 10 cases of persons undergoing antineoplastic therapy, appetite was improved by eliminating the unpleasant „metallic” aftertaste in the mouth, which is a side effect of treatment. In the sixties, Dr. Linda Bartoshuk conducted at the request of the US Army research on the usefulness of mirakuliny to improve the quality of food in extreme living conditions.

Studies have shown the absence of any side effects associated with the consumption of in excess of up to 3 000 times the standard ration for an adult. In the seventies, when taken były first attempts of commercialization mirakuliny in the US market were conducted focus groups, including children, which showed that, among others, 10 out of 10 cases of children chose sweets mirakuliny content from traditional sweeteners.

Things to remember when playing with flavor.

Mirakulin tablet should dissolve completely on the tongue, covering all parts.

Immediate effect lasts up to 2 hours – depending on the individual taste sensation.

By the end of this time miraculin it is washed away by saliva and returns normal feeling of flavors – without any side effects.

The effect can be neutralized before drinking hot drinks – such as tea If you feel that the effect of taste disappears – you can dissolve another portion – there are no restrictions on the amount of consumption mirakuliny.

During the consumption of foods under mirakuliny should be common sense moderation. Absorption kilogram of lemons cause the same effect as no mirakuliny (yes, it’s hard to resist the taste 🙂

Keep in mind that the intensity of feeling is a matter of individual taste for each person, so one will reach the desired effect after dissolving 1 serving (half a tablet), others 2 portions (whole tablet).

There is no 100% guarantee to the mirakuliny, but during many years of testing, inspection and testing, there was no case of complete lack of impact of protein on the taste buds.

Is it safe to combine miraculin with alcohol ?

There are no obstacles.

Miraculin has no effect on the properties of reception and digestion of alcohol by the body.

The only side effect, it can be faster intoxication due to neutralization of the unpleasant taste of most  alcohols. by miracle berry..

Are there any restrictions combining miraculin with foods ?

The only limitation in experiments with flavor may be your imagination. The lower the pH of the food, the more intensely we will feel the sweetness. Food and drinks not acidic (eg coffee, vodka) can be „sweetened” with lemon – electrifying effect 🙂

Why I cannot buy miracle berry from the next door store ?

This is due to the availability of small fruit, which currently provides the only source of miraculin.

Commercial farms of Miracle Fruit are located in Ghana, Thailand, Taiwan and the USA (Florida).

Shrubs bear fruit in optimum conditions after 3 years. Fruits are very unstable, their  shelf life after fracture is approximately 12 hours.

They are transported by a deep freeze. Hence the powder form of the fruit, which in the appropriate technology and the packaging allows to extend shelf-life of the active ingredient.

This has an impact on the high unit price and decided about the lack of interest in corporations using the component on a large scale (aspartame is cheaper, despite the fact that harmful)

Not without significance is also greatly influence of the sugar lobby, which has made great efforts to reduce the availability of miraculin, for fear of losing billions in profits.

Is miraculin safe for children ?
